Veganistan is a self-service, all day vegan restaurant, which follows a fusion logic, by combining elements and cuisines from all over the world, even though influences from Greece and the East are quite evident. These unique flavours derive from the cultures and experiences of Zannis, Spyros, Angeliki, Angelos, Mariska, Elissavet and Anka, who – apart from friends and neighbours – are the team of Veganistan. They always work as a team and are in good spirits. All products are handmade and healthy and one can enjoy a breakfast or brunch with toast, batzina, energy bar and kayana or other meals with main dishes (e.g. Seitan fry, tempeh, soups etc.), wraps, salads, sweets, soft drinks, drinks and special beers. Veganistan has already become widely known not only for its Seitan, but also for its very friendly atmosphere and respect for diversity, which is a key element of the team’s philosophy.
Sources of inspiration were vegetarianism, empathy and solidarity for all creatures. Their motivation was the awakening about our way of life, the aspects of violence and the benefits of an alternative suggestion about our health and society. Veganistan is located in a neighbourhood where there were no similar culinary “proposals”. Although Veganistan filled this gap in the area, the project was not rushed. There were “fermentations” and adaptations to new facts, thus slow and steady steps were taken in order to obtain the optimal result. The menu does not change significantly during the year, but it is always adapted to each season, in order to avoid greenhouse products and use seasonal raw materials instead.
